Prep time (5mins)  Cook time (30-40mins)  Serves (5-7)


  • 500 grams good quality beef mince.
  • Can of chickpeas.
  • 3-6 chilies finely chopped (depending how spicy you dig it)
  • 10 pickled garlic cloves or 3 normal cloves of garlic. ( pickled garlic loses some of that garlic punch but keeps the flavor)
  • 2 large finely chopped onions.
  • Two balls of buffalo mozzarella
  • 6 tablespoons of tomato paste or 1 can of tomatoes.
  • 1 can of black beans
  • 1 can of baked beans.
  • 150 grams of a cured meat, (salami sticks work well, its gives the chili some chewy texture) 
  • 100 g Creme fraiche (If you can tolerate a little bit of dairy)
  • Tablespoon of butter, olive oil, or coconut oil.
  • Salt and pepper.
  • Chill flakes 


  • Cook the onions and chilies in a large pan, with the tablespoon of butter, or whatever fat you chose. (10mins, onions should go clear and begin to caramelize)
  • Add the minced beef, season with salt and pepper and brown.
  • Add the tomatoes, both cans of beans and the chickpeas.
  • Chop and add the garlic cloves.
  • Let simmer for 20-30mins
  • Add buffalo mozzarella and diced salami sticks. Then simmer for another 5 mins
  • Add creme fraiche on top of the chilli before serving.
  • Also works great as a slow cooker recipe, 8-10 hours on low.
